This Mexican style coleslaw is beginning to be one of my favorite things to make/eat. I have always loved eating at Mexican Restaurants that serve authentic Mexican coleslaw, so I figured it was time to come up with my own. After a few times making it, I finally came up with something we like that is simple, healthy, and tastes great!

Mexican Coleslaw 3


2 Cups of Green Cabbage Chopped
2 Cups of Purple Cabbage Chopped
1 Cup of Carrots Shredded
1/3 Cup of Cilantro Chopped (use less if you prefer a lighter flavor)
¼ Cup of Green Onions Chopped (I have also used red onions)
4 Ounce can of Diced Green Chilies
The Juice of 1-1.5 Lime’s
Black pepper to taste (optional)


Combine and mix all the ingredients together in a large mixing bowl. Place the covered contents in the refrigerator and let it set for about 2 hours to allow the flavors to combine. Take out of the refrigerator, dish up, and enjoy :)

We love using this Mexican style coleslaw as a dip for chips and it also goes really well on fish tacos. Another great thing about it is that it’s healthy. A lot of the recipes I looked at in the past called for oils, sugar, and or salt. The natural flavor of all these ingredients give such a fresh vibrant flavor I don’t think it really needs a whole lot more. It’s super simple to make, and would be simple to adjust to fit to your liking. Hope you enjoy it as much as we do.
