Removing sugar from a diet and still having something delicious is so tricky but this lemon pound cake with lemon honey glaze nails it. As I’ve mentioned before, our middle son has shown an intolerance to sugar so we’ve been doing a lot of diet modification. My mother in law’s birthday is today and we celebrated with a dinner last night. Due to my family’s allergies I was in charge of bringing the dessert. I wanted to find something that we could all eat…and enjoy. A recap of our allergies include: nuts (except almonds), dairy, gluten, sugar, processed food and food coloring. I didn’t think it was going to be possible but this paleo lemon pound cake was a winner. Not only was it delicious, but the cake was moist and didn’t seem too dense like a lot of gluten free cakes seem. I only used about 1/3 of the lemon honey glaze and it was perfect.
