Kale and Spinach Quinoa Quiche

I am one of those people who loves a good breakfast.  I feel that good nutrition to start the day is of high importance to a healthy body.  But like a lot of us, time can get in the way of making something when I first get up and am trying to get everyone in the house ready and out the door for whatever it is we have going on.  That’s one reason I love this quiche, besides the fact that it is delicious. I can make this when I have time and then it is ready to go for the mornings.  Just heat it up, and viola, breakfast is served!

Prep time takes about 25 min, not too bad, most of that is just waiting for the quinoa to cook.  While that is cooking I like to cut and dice everything and don’t forget to preheat the oven.


Prep Time: 25 min

Cook Time: 45 min

Total: 70 Min


2/3 c Quinoa

2 Tbsp Olive Oil

1 Medium Onion

2 Leaves of Kale

2 c of Spinach

2 Cloves Garlic

½ c Cream Cheese

½ c Cheddar Cheese

5 Eggs

Pepper to taste

Seasoning to taste

Step 1- Prep

Thinly dice up 1 medium onion.

Pull stem away from the leaf of the kale and cut into thin ribbons.

Cut spinach into thin ribbons.

Mince 2 cloves of garlic.

Rinse 2/3 c of quinoa.

Step 2- Cooking time

Pre Heat Oven for 350 (our oven takes a little while to warm up so I start it here)

Place quinoa in 1 1/3 c of water and cook until done.

In a seperate pan, sauté onions in olive oil until they become slightly clear.

Once the onions are done, put them in a mixing bowl and place Kale and spinach into the pan to heat up.

Mix the garlic in with the greens and cook until the greens are soft.  When done place in the bowl with the onions.

Step 3 – Mix

Mix ½ cup of cream cheese into the bowl, make sure it is cubed to help it mix in well.

Mix ½ cup of shredded cheddar cheese into the bowl.

The quinoa should be done by now, mix into bowl and stir it all in together really well.  The heat from the quinoa should melt the chesses pretty well.

Add eggs, pepper and seasoning to taste and mix well.

Coat a glass pie dish with butter or oil and poor mixed contents into the dish.

Step 4 – Bake

Place the dish on the middle rack of the oven.

Bake at 350 for 45 min.

Check it at 40 min.  If the top is beginning to brown it is good to go.

Take out, let cool, and enjoy :)
