Every now and then we get that desire for something sweet. Unfortunately, ice cream isn’t always a great option.  This recipe is one of our go-to’s to take care of our sweet tooth without getting out of control with unhealthy eating. Popcorn is one of our family’s favorite treats.  We make it for family movie nights or just to enjoy as a snack after dinner.   The great thing about freshly popped popcorn is that it has actually been found to be a healthy treat, not to say adding sugar to make it as homemade kettle corn keeps it healthy… but at least it isn’t as calorie dense as other treats :)

I think there’s at least one key ingredient to making a good homemade popcorn, and that’s using coconut oil.  The coconut oil gives the popcorn a great fresh taste.  So here’s how we like to make our homemade kettle corn.

Ingredients
1/2 Cup of popcorn kernels
1/4 Cup sugar (We used to make it with more but we have cut back on sugar and have made it to be just enough to taste the sweet)
1/3 T of Coconut Oil (you can use other oils as well but this is our favorite)

Step 1
Using a Whirley Pop to make our popcorn, add the coconut oil to the bottom of the pot and heat over medium – medium high heat (6-7). Don’t use too high of heat or you will end up burning it. Once the oil is melted, add the popcorn kernels and the sugar.

Step 2
Once the ingredients are in the pot, keep the kernels moving and over the heat until they are fully popped.  If you are not using a Whirly Pop, mix the contents well, and with a lid over the pot, shake the pot to keep the kernels moving and from burning until they have fully popped. Once the kernels have popped remove the pot from the heat and poor into a big mixing bowl.  Make sure it is not popping before doing this to prevent hot kernels hitting you.  Let it cool for a few minutes, dish up and enjoy :)
